Ingredients

  • 1 (3 lb.) chicken
  • 1 1/2 sticks butter
  • 1 large onion
  • 1 medium green pepper
  • 4 stalks celery
  • 4 c. rice
  • paprika
  • 1 (6 oz.) tomato paste
  • 2 Tbsp. sugar
  • salt to taste
  • pepper to taste

Method

  • Cut up chicken.
  • Season with seasoned salt and pepper.
  • Place in pan, skinned side up.
  • Use 1/2 stick of butter and place small piece on each piece.
  • Cover with foil and cook until done in 350° oven.
  • Sprinkle with paprika.
  • Uncover chicken and pour broth off and save.
  • Cook rice in pot until tender.
  • Saute onions, pepper and celery with 1 stick of butter.
  • Add cooked rice and stir.
  • Pour broth in rice.
  • Add tomato paste.
  • Add sugar and stir until rice is red.
