Ingredients
- 1 (3 lb.) chicken
- 1 1/2 sticks butter
- 1 large onion
- 1 medium green pepper
- 4 stalks celery
- 4 c. rice
- paprika
- 1 (6 oz.) tomato paste
- 2 Tbsp. sugar
- salt to taste
- pepper to taste
Method
- Cut up chicken.
- Season with seasoned salt and pepper.
- Place in pan, skinned side up.
- Use 1/2 stick of butter and place small piece on each piece.
- Cover with foil and cook until done in 350° oven.
- Sprinkle with paprika.
- Uncover chicken and pour broth off and save.
- Cook rice in pot until tender.
- Saute onions, pepper and celery with 1 stick of butter.
- Add cooked rice and stir.
- Pour broth in rice.
- Add tomato paste.
- Add sugar and stir until rice is red.
