Ingredients
- 3 lb. stew beef (1 in. cubes)
- 3/4 c. carrots, peeled and sliced
- 2 stalks celery, sliced
- 2 onions, sliced
- 2 tsp. sugar
- 3 or 4 potatoes, peeled and cubed
- 2 Tbsp. tapioca
- 1 1/2 c. tomato juice
Method
- Preheat oven to 250°.
- Combine the beef carrots, celery, onions, sugar, potatoes, tapioca and tomato juice.
- Place the beef mixture in a covered greased casserole and bake at 250° for 3 1/2 hours.
- Yield: 6 to 8 servings.
