Ingredients

  • 1/4 c. olive oil
  • 1/4 c. butter or margarine
  • 8 medium onions, thinly sliced and separated into rings
  • 6 c. beef broth
  • 2 Tbsp. sugar
  • 1/4 tsp. pepper
  • 3/4 tsp. salt
  • 4 to 5 slices toasted French bread
  • 1 (6 oz.) pkg. Mozzarella cheese, sliced and cut in halves
  • grated Parmesan cheese

Method

  • Combine oil and butter in a large Dutch oven. Heat until butter melts.
  • Add onions and saute until tender. Add broth, sugar, salt and pepper. Bring to a boil. Reduce heat and simmer soup mixture 20 minutes.
  • Place toasted bread in individual soup bowls.
  • Add soup and top with cheese slice.
  • Sprinkle with Parmesan cheese.
