Ingredients
- 1/4 c. olive oil
- 1/4 c. butter or margarine
- 8 medium onions, thinly sliced and separated into rings
- 6 c. beef broth
- 2 Tbsp. sugar
- 1/4 tsp. pepper
- 3/4 tsp. salt
- 4 to 5 slices toasted French bread
- 1 (6 oz.) pkg. Mozzarella cheese, sliced and cut in halves
- grated Parmesan cheese
Method
- Combine oil and butter in a large Dutch oven. Heat until butter melts.
- Add onions and saute until tender. Add broth, sugar, salt and pepper. Bring to a boil. Reduce heat and simmer soup mixture 20 minutes.
- Place toasted bread in individual soup bowls.
- Add soup and top with cheese slice.
- Sprinkle with Parmesan cheese.
