Ingredients

  • 1/4 cups Panko Breadcrumbs
  • 4 Tablespoons Parmesan Cheese
  • 1 can (approximately 14 Oz. Size) Artichoke Hearts
  • Salt And Pepper, to taste
  • 1 clove Garlic, Minced
  • 1/4 cups Low-fat Mayonnaise
  • 2 Tablespoons Low-fat Buttermilk
  • 1 teaspoon Lemon Juice
  • 1 Tablespoon Dill Chopped
  • Salt And Pepper, to taste

Method

  • Pour the breadcrumbs and half the cheese into a plastic baggie.
  • Cut the artichoke hearts into quarters, add them to the plastic baggie and shake until well coated.
  • Place the artichokes on a sheet pan lined with parchment paper, sprinkle on another tablespoon of cheese and bake in a preheated 450 degrees F oven for 30 minutes.
  • As soon as the artichokes come out of the oven, transfer to a serving dish and sprinkle on the remaining tablespoon of cheese.
  • Serve warm.
  • To make the dipping sauce, combine the minced garlic, mayonnaise, buttermilk, lemon juice and dill in a bowl and season to taste.
  • Because this sauce is a little thick, its also great for vegetables but, if youd like it a little looser, add 1 tablespoon of low-fat milk or fat free half-and-half.
  • Note that you can substitute chives or scallions for the dill if you prefer.
