Ingredients

  • 3/4 c. sugar
  • 1/3 c. flour
  • 4 eggs, separated
  • 2 c. milk
  • 1/2 tsp. vanilla
  • 35 to 40 vanilla wafers
  • 5 or 6 bananas
  • dash of salt

Method

  • Reserve 1 banana and 10 to 12 wafers for garnish.
  • Cook 1/2 cup sugar, flour and salt in top of double boiler.
  • Stir in 4 egg yolks and milk.
  • Cook, uncovered, in a 1 1/2-quart casserole. Cover with wafers and sliced bananas.
  • Make 3 layers of each. Pour milk and egg mixture over bananas.
  • Beat egg whites; add 1/4 cup sugar.
  • Spread on top.
  • Bake at 425° for 5 minutes, until brown.
  • Serve with wafers and sliced bananas.
