Ingredients

  • 2 1/4 c. sifted flour
  • 2 tsp. baking powder
  • 1/2 tsp. soda
  • 3/4 tsp. salt
  • 2 Tbsp. shortening
  • 3/4 c. sugar
  • 1 beaten egg
  • 1 Tbsp. grated orange rind
  • 1/2 c. chopped nuts
  • 3/4 c. orange juice

Method

  • Sift flour with baking powder, soda and salt.
  • Cream shortening and sugar.
  • Mix in thoroughly the egg, orange rind and nuts.
  • Add dry ingredients alternately with orange juice.
  • Bake in a greased 5-cup ring mold in a slow oven (325°) about 45 minutes.
  • Remove from pan and cool on rack.
  • Ice with softened cream cheese. Decorate with slices of stuffed olives and serve with fruit salad.
