Ingredients
- 2 1/2 c. sifted cake flour
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1/3 c. margarine
- 2/3 c. sugar
- 2 heaping Tbsp. grated orange rind (2 medium oranges)
- 1 c. orange juice
- 4 large egg whites
Method
- On waxed paper, sift together flour, baking powder and salt. Cream margarine, sugar and orange rind.
- Add flour mixture in 4 additions, alternating with orange juice, beating only until smooth.
- Beat egg whites until they hold stiff peaks and fold into other mixture.
- Pour into a 9-inch or 12-inch tube pan that has been sprayed with cooking spray.
- Bake at 350° for 50 to 60 minutes.
- Cool on wire rack for 10 minutes.
- Turn out on a wire rack to cool.
