Ingredients

  • 2 1/2 c. sifted cake flour
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 1/3 c. margarine
  • 2/3 c. sugar
  • 2 heaping Tbsp. grated orange rind (2 medium oranges)
  • 1 c. orange juice
  • 4 large egg whites

Method

  • On waxed paper, sift together flour, baking powder and salt. Cream margarine, sugar and orange rind.
  • Add flour mixture in 4 additions, alternating with orange juice, beating only until smooth.
  • Beat egg whites until they hold stiff peaks and fold into other mixture.
  • Pour into a 9-inch or 12-inch tube pan that has been sprayed with cooking spray.
  • Bake at 350° for 50 to 60 minutes.
  • Cool on wire rack for 10 minutes.
  • Turn out on a wire rack to cool.
