Ingredients

  • 2 1/4 c. cake flour
  • 1 1/2 c. sugar
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 1/2 c. Wesson oil
  • 5 egg yolks
  • 3/4 c. orange juice (rind optional)
  • 1 c. egg whites
  • 1/2 tsp. cream of tartar
  • pinch of salt

Method

  • Stir
  • together flour, sugar, baking powder and salt. Make a hole in center and add oil, egg yolks and orange juice. Mix in bowl
  • until
  • smooth.
  • Beat egg whites, cream of tartar and salt until
  • stiff
  • with mixer.
  • Blend top ingredients in with egg whites lightly, using a spatula. I use an angel food cake pan to bake.
  • Bake at 325° for 45 minutes to 1 hour.
  • Top with
  • butter frosting
  • with 1 tablespoon orange juice.
  • Delicious.
