- 2 1/4 c. cake flour
- 1 1/2 c. sugar
- 3 tsp. baking powder
- 1 tsp. salt
- 1/2 c. Wesson oil
- 5 egg yolks
- 3/4 c. orange juice (rind optional)
- 1 c. egg whites
- 1/2 tsp. cream of tartar
- pinch of salt
Method
- Stir
- together flour, sugar, baking powder and salt. Make a hole in center and add oil, egg yolks and orange juice. Mix in bowl
- until
- smooth.
- Beat egg whites, cream of tartar and salt until
- stiff
- with mixer.
- Blend top ingredients in with egg whites lightly, using a spatula. I use an angel food cake pan to bake.
- Bake at 325° for 45 minutes to 1 hour.
- Top with
- butter frosting
- with 1 tablespoon orange juice.
- Delicious.
