Ingredients

  • 34 cup egg substitute
  • 1 cup canola oil
  • 2 cups sugar
  • 2 cups all-purpose flour
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 2 teaspoons vanilla
  • 2 cups shredded coconut
  • 2 cups carrots
  • 1 cup walnuts
  • 1 cup crushed pineapple
  • 1 (16 ounce) can cream cheese frosting

Method

  • Pre-heat oven to 350 degrees.
  • Finely chop walnuts.
  • Shred carrots with cheese grater.
  • Blend all ingredients in a large bowl.
  • Pour into a greased 13x9x2 baking pan.
  • Bake at 350 degrees for approximately 35 minutes or until a knife inserted in the center comes out clean.
