Ingredients
- 2 c. cubed potatoes
- 1/2 c. boiling water
- 1 c. chopped onion
- 3 Tbsp. butter or margarine
- 3 Tbsp. flour
- dash of pepper
- 3 c. milk
- 1 1/2 c. chopped cooked ham
- 1 1/2 c. (6 oz.) American cheese
Method
- Cook potatoes in water about 10 minutes until tender.
- Drain, reserving liquid.
- Add enough water to make 1 cup.
- Cook onion in margarine until tender but not brown.
- Blend in flour and pepper. Add milk and potato water all at once.
- Cook and stir until mixture thickens.
- Add ham and cheese.
- Stir to melt cheese. Don't boil.
- Serves 8.
