Ingredients

  • 2 c. cubed potatoes
  • 1/2 c. boiling water
  • 1 c. chopped onion
  • 3 Tbsp. butter or margarine
  • 3 Tbsp. flour
  • dash of pepper
  • 3 c. milk
  • 1 1/2 c. chopped cooked ham
  • 1 1/2 c. (6 oz.) American cheese

Method

  • Cook potatoes in water about 10 minutes until tender.
  • Drain, reserving liquid.
  • Add enough water to make 1 cup.
  • Cook onion in margarine until tender but not brown.
  • Blend in flour and pepper. Add milk and potato water all at once.
  • Cook and stir until mixture thickens.
  • Add ham and cheese.
  • Stir to melt cheese. Don't boil.
  • Serves 8.
