Ingredients
- 2 (30 oz.) cans sweet potatoes, drained
- 2/3 c. sugar
- 1 tsp. salt
- 4 eggs, well beaten
- 1 tsp. cinnamon
- 1 c. milk
- 1 tsp. vanilla
- 1 stick oleo, melted
- 2 c. chopped pecans
- 2 c. brown sugar
- 2/3 c. oleo, melted
- 2/3 c. flour
Method
- Preheat oven to 350°.
- Combine sweet potatoes and sugar in a mixing bowl.
- Mix well and add salt, eggs, cinnamon, milk, vanilla and 1 stick melted oleo.
- Blend all ingredients well.
- Spray 9 x 13-inch oblong dish with Pam and pour above mixture into the dish. In a medium size bowl, add brown sugar and flour.
- Add 2/3 cup melted oleo and pecans.
- Mixture will be crumbly.
- Spoon over potato mixture and bake for 30 minutes or until bubbly.
- You can also top with mini marshmallows and bake a few extra minutes.
