Ingredients

  • 2 (30 oz.) cans sweet potatoes, drained
  • 2/3 c. sugar
  • 1 tsp. salt
  • 4 eggs, well beaten
  • 1 tsp. cinnamon
  • 1 c. milk
  • 1 tsp. vanilla
  • 1 stick oleo, melted
  • 2 c. chopped pecans
  • 2 c. brown sugar
  • 2/3 c. oleo, melted
  • 2/3 c. flour

Method

  • Preheat oven to 350°.
  • Combine sweet potatoes and sugar in a mixing bowl.
  • Mix well and add salt, eggs, cinnamon, milk, vanilla and 1 stick melted oleo.
  • Blend all ingredients well.
  • Spray 9 x 13-inch oblong dish with Pam and pour above mixture into the dish. In a medium size bowl, add brown sugar and flour.
  • Add 2/3 cup melted oleo and pecans.
  • Mixture will be crumbly.
  • Spoon over potato mixture and bake for 30 minutes or until bubbly.
  • You can also top with mini marshmallows and bake a few extra minutes.
