Ingredients
- 2 c. meat (beef cubes)
- 1 c. diced carrots
- 8 potatoes, diced
- 1 large onion, cut up fine
- 1 c. whole kernel corn
- 1 qt. water
- salt and pepper to taste
- 1 qt. tomatoes
Method
- Cover meat with water.
- Bring to boil, then reduce heat and simmer 10 minutes.
- Add carrots, potatoes, onions and corn to meat stock.
- Cover and cook 15 minutes.
- Add tomatoes and cook 30 minutes until vegetables are tender.
- Add salt and pepper to taste.
