Ingredients

  • cucumbers
  • 4 Tbsp. pickling spices (mixed)
  • 4 Tbsp. canning salt
  • 4 Tbsp. alum
  • vinegar
  • sugar

Method

  • Wash and slice enough cucumbers to fill a gallon glass jar. Add spices (in tied cloth), salt and alum, then cover with cold vinegar.
  • Let set in dark place for 6 weeks.
  • Date top of lid when to take out.
  • At that time, drain off vinegar (do not wash). Layer back into jar with 8 to 10 cups of sugar.
  • Cloth with 5 spices may be added back to jar.
  • Let stand until sugar is dissolved.
  • Leave on pantry shelf.
  • Take out as many as needed and chill in refrigerator, then serve.
  • The rest can stay on shelf until used up.
  • Very crisp.
