Ingredients

  • 1 lb. (2 1/4 c.) green split peas
  • 2 1/2 qt. water
  • 1 meaty ham bone
  • 1 1/2 c. sliced onions
  • 1/2 tsp. pepper
  • 1/4 tsp. garlic salt
  • 1/4 tsp. marjoram
  • 1 c. diced celery
  • 1 c. sliced carrots
  • potatoes as desired
  • 1 tsp. parsley flakes
  • salt to taste

Method

  • In a large kettle, combine peas, water, ham bone, onions and seasonings.
  • Simmer, covered, for 2 hours.
  • Remove bone, cut off bits of meat and return to soup along with celery, carrots, potatoes and remaining seasonings.
  • Cook 45 minutes.
  • Serve with French bread.
  • Yields 12 servings.
  • Better the second day.
