Ingredients

  • 2 1/2 c. sugar
  • 6 Tbsp. flour
  • 3 Tbsp. cocoa
  • 1/2 tsp. salt
  • 3 3/4 c. sugar
  • 3 Tbsp. butter
  • 6 eggs, separated
  • 3 Tbsp. vanilla

Method

  • Mix sugar and cocoa well.
  • Add 3 cups of milk and heat.
  • In a bowl, mix egg yolks, flour, salt and 3/4 cup milk.
  • Beat egg mixture until smooth and add to hot mixture.
  • Cook, stirring until thickened.
  • Remove from heat and add vanilla and butter.
  • Pour into baked pie shell (makes two 10-inch or three 8-inch pies). Beat egg whites with 8 tablespoons of sugar and spread on top of pies.
  • Then brown.
