Ingredients
- 1/4 c. olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 3 lb. (7 to 9) fresh tomatoes, peeled and pureed
- 3 (6 oz. each) cans tomato paste
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 Tbsp. dried basil
- 1 Tbsp. dried oregano
- 1/4 c. chopped parsley
- 1 tsp. sugar
- 1 c. water
Method
- In large saucepan, heat olive oil until hot.
- Add garlic and onion and cook until tender.
- Stir in remaining ingredients and simmer gently, uncovered, stirring occasionally, 1 to 1 1/2 hours or until thickness desired.
- Cool and package in meal size portions.
- Makes about 7 cups.
