Ingredients

  • 1/4 c. olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 lb. (7 to 9) fresh tomatoes, peeled and pureed
  • 3 (6 oz. each) cans tomato paste
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 Tbsp. dried basil
  • 1 Tbsp. dried oregano
  • 1/4 c. chopped parsley
  • 1 tsp. sugar
  • 1 c. water

Method

  • In large saucepan, heat olive oil until hot.
  • Add garlic and onion and cook until tender.
  • Stir in remaining ingredients and simmer gently, uncovered, stirring occasionally, 1 to 1 1/2 hours or until thickness desired.
  • Cool and package in meal size portions.
  • Makes about 7 cups.
