Ingredients

  • 2 lb. pork ribs
  • 2 (32 oz.) jars sauerkraut
  • 2 yellow onions
  • 2 tart green apples
  • 1/4 c. brown sugar
  • 1 Tbsp. caraway seed

Method

  • Drain the sauerkraut and mix in the caraway seed.
  • Peel the onions and cut in half; core and cut the apples in wedges.
  • Next, layer the ingredients in a large Dutch oven in this order: sauerkraut mixture, onions, apples, brown sugar and the ribs. Bring to a boil, then cover and simmer gently for 2 or 3 hours until ribs are tender.
  • Serves 6.
