Ingredients
- 1 lb. okra
- 1 medium onion, chopped
- 1 medium green pepper
- 2 Tbsp. Crisco shortening
Method
- Set out a large skillet, having a tight fitting cover.
- Wash, cut off stems, ends, slice and set aside.
- Chop okra and set aside.
- Chop onion and green pepper (about 1/2 cup).
- Add onions and green pepper; cook over medium heat until onions are transparent.
- Add sliced okra and 2 cups canned tomatoes, cut up in small pieces.
- Add salt and pepper to your taste.
- Simmer, covered, for 30 to 40 minutes or until okra is tender.
- Serves 8.
