Ingredients

  • 1 lb. okra
  • 1 medium onion, chopped
  • 1 medium green pepper
  • 2 Tbsp. Crisco shortening

Method

  • Set out a large skillet, having a tight fitting cover.
  • Wash, cut off stems, ends, slice and set aside.
  • Chop okra and set aside.
  • Chop onion and green pepper (about 1/2 cup).
  • Add onions and green pepper; cook over medium heat until onions are transparent.
  • Add sliced okra and 2 cups canned tomatoes, cut up in small pieces.
  • Add salt and pepper to your taste.
  • Simmer, covered, for 30 to 40 minutes or until okra is tender.
  • Serves 8.
