Ingredients

  • 1 1/2 c. okra, cut 1/2 inch slices
  • 1/2 c. onion, chopped
  • 1/2 c. green pepper, chopped
  • 2 Tbsp. butter or margarine
  • 1 Tbsp. sugar
  • 1 tsp. flour
  • 1 (16 oz.) can tomatoes

Method

  • Cook okra in a little water until tender, drain.
  • Cook onions and green pepper in margarine until tender, do not brown.
  • Stir in sugar and flour, 1/2 teaspoon salt, dash of pepper.
  • Add tomatoes, drained okra and heat through, simmer a few minutes.
  • You can also use fresh tomatoes, about 4 medium.
