Ingredients

  • 1 1/2 c. sugar, divided
  • 1/2 c. (1 stick) margarine, softened
  • 2 egg whites
  • 1 1/2 c. all-purpose flour
  • 1 c. Quaker oats (Quick or old-fashioned), uncooked
  • 1/4 tsp. baking soda
  • 1 c. Libby's solid pack pumpkin
  • 1/2 tsp. pumpkin pie spice
  • 1/4 c. sesame seed

Method

  • Beat 1 cup sugar and margarine until fluffy.
  • Mix in egg whites.
  • Stir in combined flour, oats and baking soda.
  • On wax paper, press into 16 x 12-inch rectangle.
  • Spread combined pumpkin, 1/2 cup sugar and spice over dough to 1/2 inch from edge. From narrow end, roll up dough.
  • Sprinkle sesame seed around roll, pressing gently.
  • Wrap in wax paper; freeze overnight or until firm.
