Ingredients
- 1 1/2 c. sugar, divided
- 1/2 c. (1 stick) margarine, softened
- 2 egg whites
- 1 1/2 c. all-purpose flour
- 1 c. Quaker oats (Quick or old-fashioned), uncooked
- 1/4 tsp. baking soda
- 1 c. Libby's solid pack pumpkin
- 1/2 tsp. pumpkin pie spice
- 1/4 c. sesame seed
Method
- Beat 1 cup sugar and margarine until fluffy.
- Mix in egg whites.
- Stir in combined flour, oats and baking soda.
- On wax paper, press into 16 x 12-inch rectangle.
- Spread combined pumpkin, 1/2 cup sugar and spice over dough to 1/2 inch from edge. From narrow end, roll up dough.
- Sprinkle sesame seed around roll, pressing gently.
- Wrap in wax paper; freeze overnight or until firm.
