Ingredients

  • 1 1/4 c. sifted flour
  • 1 c. quick rolled oats
  • 3/4 c. sugar
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 2 large eggs
  • 1 1/4 c. applesauce
  • 1/2 c. raisins
  • 1/3 c. vegetable oil
  • 1/4 c. milk
  • 2 Tbsp. firmly packed brown sugar
  • 2 Tbsp. chopped pecans
  • 1/4 tsp. cinnamon

Method

  • Preheat oven to 350°.
  • Mix flour, oats, sugar, salt, baking powder, baking soda, cinnamon and nutmeg together in a large bowl; set aside.
  • Combine eggs, applesauce, raisins, oil and milk in a bowl.
  • Make a well in reserved flour mixture.
  • Stir in applesauce mixture by hand into flour until flour is just moistened.
  • Grease 1 loaf pan.
  • Turn batter into pan.
