- 1 1/4 c. sifted flour
- 1 c. quick rolled oats
- 3/4 c. sugar
- 1 tsp. salt
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 2 large eggs
- 1 1/4 c. applesauce
- 1/2 c. raisins
- 1/3 c. vegetable oil
- 1/4 c. milk
- 2 Tbsp. firmly packed brown sugar
- 2 Tbsp. chopped pecans
- 1/4 tsp. cinnamon
Method
- Preheat oven to 350°.
- Mix flour, oats, sugar, salt, baking powder, baking soda, cinnamon and nutmeg together in a large bowl; set aside.
- Combine eggs, applesauce, raisins, oil and milk in a bowl.
- Make a well in reserved flour mixture.
- Stir in applesauce mixture by hand into flour until flour is just moistened.
- Grease 1 loaf pan.
- Turn batter into pan.
