Ingredients

  • 1/2 c. butter or margarine
  • 2/3 c. sugar
  • 2/3 c. dark corn syrup
  • 2/3 c. regular rolled oats
  • 2 eggs
  • 1 tsp. vanilla
  • 1 9 inch unbaked pie crust
  • 1/2 c. chopped pecans
  • whipped cream (optional)

Method

  • In a saucepan, melt the butter.
  • Remove from heat and stir in the sugar, corn syrup and oats.
  • Stir in eggs and vanilla.
  • Pour mixture into the prepared crust.
  • Top with pecans.
  • Cover the edge with foil to prevent over browning.
  • Bake in a 325 oven for 25 minutes.
  • Remove foil.
  • Bake for 20 to 25 minutes more or until set.
  • Cool on a wire rack.
  • Serve with whipped cream and top with baked pie crust shapes, if you like.
  • Makes 6 servings.
