Ingredients
- 1/2 c. butter or margarine
- 2/3 c. sugar
- 2/3 c. dark corn syrup
- 2/3 c. regular rolled oats
- 2 eggs
- 1 tsp. vanilla
- 1 9 inch unbaked pie crust
- 1/2 c. chopped pecans
- whipped cream (optional)
Method
- In a saucepan, melt the butter.
- Remove from heat and stir in the sugar, corn syrup and oats.
- Stir in eggs and vanilla.
- Pour mixture into the prepared crust.
- Top with pecans.
- Cover the edge with foil to prevent over browning.
- Bake in a 325 oven for 25 minutes.
- Remove foil.
- Bake for 20 to 25 minutes more or until set.
- Cool on a wire rack.
- Serve with whipped cream and top with baked pie crust shapes, if you like.
- Makes 6 servings.
