Ingredients
- 1 (16 oz.) can pumpkin
- 2 eggs
- 1 (12 oz.) can evaporated skim milk
- 9 packets Sweet One sweetener
- 1/2 tsp. ginger
- 1 tsp. cinnamon
- 1/4 tsp. cloves
- 1/2 c. Bisquick baking mix
- 1/4 tsp. nutmeg
- 2 tsp. vanilla
Method
- Heat oven to 350°.
- Spray a 9-inch deep pie plate (I use a 9-inch round cake plate) with nonstick spray.
- Beat all ingredients until smooth (1 minute in blender on high or 2 minutes with hand mixer).
- Pour into pie plate and bake for 50 to 55 minutes or until knife inserted in center comes out clean.
- Yield: 8 servings.
