Ingredients

  • 1 (16 oz.) can pumpkin
  • 2 eggs
  • 1 (12 oz.) can evaporated skim milk
  • 9 packets Sweet One sweetener
  • 1/2 tsp. ginger
  • 1 tsp. cinnamon
  • 1/4 tsp. cloves
  • 1/2 c. Bisquick baking mix
  • 1/4 tsp. nutmeg
  • 2 tsp. vanilla

Method

  • Heat oven to 350°.
  • Spray a 9-inch deep pie plate (I use a 9-inch round cake plate) with nonstick spray.
  • Beat all ingredients until smooth (1 minute in blender on high or 2 minutes with hand mixer).
  • Pour into pie plate and bake for 50 to 55 minutes or until knife inserted in center comes out clean.
  • Yield: 8 servings.
