Ingredients

  • 2 c. rolled oats
  • 2 c. buttermilk
  • 1/2 c. all-purpose flour
  • 1/2 c. whole wheat flour
  • 2 tsp. sugar
  • 1 1/2 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 1 tsp. salt
  • 2 eggs
  • 2 Tbsp. butter, melted and cooled

Method

  • Partially prepare the night before.
  • Combine buttermilk and oats.
  • Cover and refrigerate overnight.
  • In the morning, mix together flours, sugar, baking soda, baking powder and salt.
  • Set aside.
  • In a large bowl, beat 2 eggs.
  • Add butter; blend.
  • Add oatmeal mixture.
  • Blend in flour.
  • Batter will be very thick so you might want to add a few tablespoons of buttermilk but no more than 4 tablespoons.
  • Fry pancakes on electric griddle at 345°.
