- 2 c. rolled oats
- 2 c. buttermilk
- 1/2 c. all-purpose flour
- 1/2 c. whole wheat flour
- 2 tsp. sugar
- 1 1/2 tsp. baking powder
- 1 1/2 tsp. baking soda
- 1 tsp. salt
- 2 eggs
- 2 Tbsp. butter, melted and cooled
Method
- Partially prepare the night before.
- Combine buttermilk and oats.
- Cover and refrigerate overnight.
- In the morning, mix together flours, sugar, baking soda, baking powder and salt.
- Set aside.
- In a large bowl, beat 2 eggs.
- Add butter; blend.
- Add oatmeal mixture.
- Blend in flour.
- Batter will be very thick so you might want to add a few tablespoons of buttermilk but no more than 4 tablespoons.
- Fry pancakes on electric griddle at 345°.
