Ingredients

  • 100 grams Unsalted butter
  • 1 Egg
  • 120 grams Cake flour
  • 70 grams Oatmeal
  • 70 grams Soft brown sugar
  • 50 grams Chocolate chips
  • 50 grams Walnuts

Method

  • Sift the flour and beat the egg.
  • Roughly break up the walnuts by hand.
  • Spread them out on a heatproof plate, wrap, dry roast in the microwave for 3 minutes, then let them cool down.
  • Bring the butter to room temperature and whisk in the sugar until it turns white.
  • Mix in the egg in batches.
  • Add the flour, oatmeal, chocolate chips and walnuts in that order, mixing with a rubber spatula with each addition.
  • Line a baking tray with parchment paper, and use two spoons to drop mounds of dough onto the tray.
  • Bake for 20 minutes at 170C.
  • They are done when nicely browned.
