Ingredients

  • 1 c. pitted dates
  • 1 c. apple juice
  • 3 c. rolled oats
  • 1 1/2 c. whole wheat flour
  • 1/2 tsp. baking soda
  • 1 tsp. cinnamon
  • pinch each of cloves, nutmeg and ginger
  • 1/4 c. ground walnuts
  • 1/4 c. chopped raisins
  • 3/4 c. melted butter
  • 3/4 c. walnut oil

Method

  • Preheat oven to 350°.
  • Simmer dates in juice until soft. Combine oats, flour, baking soda, spices and nuts.
  • Chop raisins in flour and add.
  • Put dates and liquid, melted butter and oil in a blender and puree until smooth.
  • Combine with dry ingredients. Mix well.
  • Drop by teaspoons onto cookie sheet.
  • Bake 8 to 10 minutes.
  • Cool on rack.
