Ingredients
- 12 medium tomatoes
- 1 1/2 tsp. salt
- 1 1/2 tsp. sugar
- 3 (10 oz.) frozen chopped spinach
- 1 medium onion, chopped
- 1/3 c. butter
- 3 Tbsp. flour
- 1 1/2 c. milk
- 3/4 tsp. salt
- 1/2 tsp. white pepper
Method
- Cut top 1/4 off tomatoes.
- Scoop out.
- Sprinkle insides with salt and sugar.
- Invert tomatoes and drain.
- Cook spinach briefly. Press water out.
- Saute onion in butter.
- Add flour.
- Stir until blended, then add milk.
- Stir until thick and bubbly.
- Add spinach, salt and pepper.
- Fill tomatoes.
- Can sprinkle tops with buttered crumbs or Parmesan cheese.
- Prepare ahead, but do not bake up to 24 hours.
- Bake at 350° for 20 minutes.
- Let stand 30 minutes.
