Ingredients

  • 12 medium tomatoes
  • 1 1/2 tsp. salt
  • 1 1/2 tsp. sugar
  • 3 (10 oz.) frozen chopped spinach
  • 1 medium onion, chopped
  • 1/3 c. butter
  • 3 Tbsp. flour
  • 1 1/2 c. milk
  • 3/4 tsp. salt
  • 1/2 tsp. white pepper

Method

  • Cut top 1/4 off tomatoes.
  • Scoop out.
  • Sprinkle insides with salt and sugar.
  • Invert tomatoes and drain.
  • Cook spinach briefly. Press water out.
  • Saute onion in butter.
  • Add flour.
  • Stir until blended, then add milk.
  • Stir until thick and bubbly.
  • Add spinach, salt and pepper.
  • Fill tomatoes.
  • Can sprinkle tops with buttered crumbs or Parmesan cheese.
  • Prepare ahead, but do not bake up to 24 hours.
  • Bake at 350° for 20 minutes.
  • Let stand 30 minutes.
