Ingredients
- 1 1/2 c. flour
- 1 1/2 tsp. baking soda
- 3/4 tsp. salt
- 1/2 tsp. ground nutmeg
- 2 eggs
- 1 c. plus 2 Tbsp. sugar
- 1/2 c. vegetable oil
- 2 c. diced peeled apples
- 1 1/2 c. chopped walnuts
- 3/4 c. flaked coconut
Method
- In a large bowl, combine the flour, baking soda, salt and nutmeg.
- In another bowl, beat eggs, sugar and oil.
- Stir in apples, nuts and coconut.
- Stir into dry ingredients until moistened.
- Fill 18 greased muffin cups 3/4 full.
- Bake at 350° for 25 to 30 minutes.
- Cool in pan 10 minutes before removing to wire racks.
