Ingredients
- 1/4 c. oil
- 1 medium onion, sliced thinly and chopped
- 2 Tbsp. fresh chopped parsley
- 1 garlic clove, crushed
- 1 tsp. dried oregano
- 2 c. ground nuts
- 1/2 c. ketchup
- 1 c. dried bread crumbs
- 1 Tbsp. soy sauce
- 1/2 c. wheat germ
- 1 to 2 eggs (optional)
- 1 large bunch fresh spinach, chopped and steamed 5 minutes
Method
- Saute in oil the onion, parsley, garlic and oregano.
- Combine nuts, bread crumbs, ketchup, wheat germ and soy sauce. Put all ingredients together into a loaf shape. Bake at 350° for 30 minutes. Serve in place of meat loaf, sliced.
