Ingredients

  • 1/4 c. oil
  • 1 medium onion, sliced thinly and chopped
  • 2 Tbsp. fresh chopped parsley
  • 1 garlic clove, crushed
  • 1 tsp. dried oregano
  • 2 c. ground nuts
  • 1/2 c. ketchup
  • 1 c. dried bread crumbs
  • 1 Tbsp. soy sauce
  • 1/2 c. wheat germ
  • 1 to 2 eggs (optional)
  • 1 large bunch fresh spinach, chopped and steamed 5 minutes

Method

  • Saute in oil the onion, parsley, garlic and oregano.
  • Combine nuts, bread crumbs, ketchup, wheat germ and soy sauce. Put all ingredients together into a loaf shape. Bake at 350° for 30 minutes. Serve in place of meat loaf, sliced.
