Ingredients

  • 2 3/4 c. sifted flour
  • 2 3/4 tsp. baking powder
  • 1 1/2 tsp. salt
  • 1 3/4 c. sugar
  • 1 c. butter or margarine (soft)
  • 3/4 c. milk
  • 3 eggs, whole
  • 1 egg yolk
  • 1 tsp. vanilla
  • 1 tsp. almond extract
  • 1/2 c. chopped walnuts
  • 1/2 c. chopped maraschino cherries

Method

  • Sift flour with baking powder, salt
  • and sugar in large bowl of electric mixer. Add
  • shortening,
  • milk,
  • vanilla
  • and almond extract.
  • Beat on #3 speed for
  • 2 minutes.
  • Stop mixer, scrape beaters.
  • Add three eggs and
  • extra
  • yolk all at once to mixture. Beat two minutes
  • longer.
  • Scrape bowl while beating. Line well greased and lightly
  • floured
  • 10-inch
  • tube
  • pan with chopped nuts and cherries.
  • Add batter. Bake
  • in 375° oven for 50 minutes or until cake tester
  • comes
  • out
  • clean.
  • Unmold and cool.
  • Yields about 12 large wedges.
