Ingredients
- 2 Tbsp. butter
- 1 medium onion, chopped
- water (see directions below)
- 1 1/2 lb. haddock fillets, cut in half
- 1 c. potato, cut up into bite-size pieces
- 1/2 tsp. salt
- dash of pepper
- 2 c. milk
Method
- Cook and stir onions in butter in a 2-quart saucepan until onion is tender (not browned).
- Remove from heat.
- Add haddock, potato, salt and pepper with enough water to cover.
- Cover and cook until potato is tender and fish is flaky (about 15 minutes). Stir in milk and heat.
