Ingredients

  • 1 qt. low-fat milk
  • 6 eggs
  • 1/8 tsp. salt
  • 1/2 c. sugar
  • 1/2 tsp. nutmeg
  • 1 1/2 tsp. vanilla
  • 1 c. heavy cream, whipped

Method

  • Heat milk in saucepan.
  • Do not boil.
  • Beat eggs in, boil.
  • Add salt, gradually beat in sugar. Beat 1 cup of hot milk in egg mixture.
  • Then add egg mixture to remaining hot milk mixture in saucepan. Beat constantly.
  • Cook over low heat, stirring constantly until thickens and 160° on candy thermometer.
  • Stir in 1/2 teaspoon nutmeg and vanilla.
  • Place saucepan in large bowl of ice for 12 minutes.
  • Cover and refrigerate 24 hours.
