Ingredients
- 1 qt. low-fat milk
- 6 eggs
- 1/8 tsp. salt
- 1/2 c. sugar
- 1/2 tsp. nutmeg
- 1 1/2 tsp. vanilla
- 1 c. heavy cream, whipped
Method
- Heat milk in saucepan.
- Do not boil.
- Beat eggs in, boil.
- Add salt, gradually beat in sugar. Beat 1 cup of hot milk in egg mixture.
- Then add egg mixture to remaining hot milk mixture in saucepan. Beat constantly.
- Cook over low heat, stirring constantly until thickens and 160° on candy thermometer.
- Stir in 1/2 teaspoon nutmeg and vanilla.
- Place saucepan in large bowl of ice for 12 minutes.
- Cover and refrigerate 24 hours.
