- 1-1/2 cup water, warm
- 2 tsp. yeast
- 2 tsp. sugar
- 2 tsp. salt
- 4 tbsp. oil
- 1-1/2 cup yogurt
- 4 cups all purpose flour
- 1/4 cup ghee
- butter, to brush on top after cooking
- Extra flour for dusting
- Olive oil
- melted butter
- Smoked paprika
- Toasted cumin seeds
- Caramelized onions
- Chopped garlic
- Fleur de sel
Method
- Add the yeast and sugar to the bowl of warm water and let that sit for 5 minutes.
- Add the yogurt, salt and oil to the yeast mixture.
- Place the flour in a mixing bowl.
- Add the yeast mixture to the flour and mix until it just comes together.
- This mixture will be very wet and sticky, and you will not need to mix this with your hands.
- Once combined, cover with plastic wrap and let it rest for anywhere between 30 minutes and 2 hours.
- Flour your hands and gather up the dough.
- Divide the dough into 12 portions.
- With floured hands, stretch each dough ball so until it is thin.
- Place each naan on a cookie sheet, brush with olive oil or melted butter.
- Add the desired garnish to the top of the naan.
- Preheat the broiler in your oven to 500F.
- Under your broiler (or heat source), lay the dough on a cookie sheet.
- Cook for 3-4 minutes under the heat source, until the top of the naan is light browned.
