Ingredients
- 4 large green peppers
- 2 c. cooked rice
- 1 medium onion, minced
- 8 oz. fully cooked ground beef
- 1 c. shredded Cheddar cheese
Method
- Parboil peppers in boiling water 5 minutes, drain.
- Mix rice, onion,
- meat
- and
- 1/2
- cup
- cheese.
- Generously
- stuff peppers with mixture;
- top with
- remaining
- 1/2
- cup
- cheese. Place upright in shallow baking pan.
- Bake in 350° oven for 40 minutes or until stuffing is hot and topping browned.
- Makes 4 servings.
