Ingredients

  • 2 cups shortening (Crisco is best)
  • 2 cups granulated sugar
  • 2 cups packed brown sugar
  • 4 large eggs
  • 2 cups peanut butter
  • 4 teaspoons baking soda
  • 2 teaspoons vanilla extract
  • 1 teaspoon salt
  • 6 cups all-purpose flour

Method

  • Preheat oven to 375.
  • (My oven runs a bit hot, so I put mine at 350.
  • ).
  • Cream white sugar, brown sugar and crisco until fluffy.
  • Add eggs and beat well.
  • 'Beat in peanut butter, baking soda, vanilla and salt.
  • You'll have to stir in about 1/2 to 3/4 of the flour.
  • do not use a mixer.This makes an extremely stiff dough you might have to mix in the remaining flour by hand.
  • Shape dough into little 1- 1 1/2 inch diameter balls.
  • Place on ungreased cookie sheet.
  • Use a fork and press down on the top of the balls to make a depression.
  • Bake for 7-9 minutes or until edges are browned.
  • Wait a few seconds before transferring cookies to cooling rack or newspaper.
