Ingredients

  • 3/4 cups Sugar
  • 1/2 cups Margarine, Softened
  • 2 whole Eggs
  • 1-1/2 cup Mashed, Ripe Bananas (I Usually Use 3 Medium)
  • 1/3 cups Skim Milk
  • 1 teaspoon Vanilla
  • 1 cup All-purpose Flour
  • 1 cup Whole Wheat Flour
  • 1 teaspoon Baking Soda
  • 1/2 teaspoons Salt

Method

  • Heat oven to 350 degrees F. Spray a 9x5 loaf pan with baking spray.
  • In a large bowl, cream together sugar and margarine. Add eggs and mix well. Blend in mashed bananas, milk and vanilla.
  • In a different small bowl, whisk together flours, baking soda and salt. Add to creamed mixture and stir until combined.
  • Pour into prepared pan. Bake at 350 degrees for 50-60 minutes (I usually let it go for the full 60 minutes, but it will vary depending on your own oven....check at 50 minutes and then determine how much longer to bake by insterting a toothpick or cake tester into the center of the bread. If it comes out clean, then the bread is done).
  • Cool in the pan for 5 minutes and then remove the bread to a wire rack to cool completely.
  • Wrap the bread in plastic wrap and store in the refrigerator. Enjoy!
