Ingredients

  • 1 (16 oz.) bag frozen broccoli cuts
  • 1/2 c. mayonnaise
  • 1 can cream of mushroom soup
  • 2 eggs
  • 1 c. sliced mushrooms
  • 4 oz. shredded Cheddar cheese
  • 32 Ritz crackers
  • 1/4 c. melted margarine

Method

  • Cook broccoli cuts until crisp.
  • Mix mayonnaise, mushroom soup, eggs and cheese with electric mixer until blended.
  • Add drained broccoli and mushrooms to mayonnaise/egg mixture.
  • Place in 8-inch square or 2-quart baking dish.
  • Top with crushed crackers mixed with melted margarine.
  • Bake uncovered for 45 minutes at 350°.
