- 1 (16 oz.) bag frozen broccoli cuts
- 1/2 c. mayonnaise
- 1 can cream of mushroom soup
- 2 eggs
- 1 c. sliced mushrooms
- 4 oz. shredded Cheddar cheese
- 32 Ritz crackers
- 1/4 c. melted margarine
Method
- Cook broccoli cuts until crisp.
- Mix mayonnaise, mushroom soup, eggs and cheese with electric mixer until blended.
- Add drained broccoli and mushrooms to mayonnaise/egg mixture.
- Place in 8-inch square or 2-quart baking dish.
- Top with crushed crackers mixed with melted margarine.
- Bake uncovered for 45 minutes at 350°.
