Ingredients

  • 3 eggs, lightly beaten
  • 1/2 c. sugar
  • 1/4 tsp. salt
  • 3 c. milk, scalded
  • 1 tsp. vanilla
  • 1/2 c. flaked coconut

Method

  • Preheat oven to 350°.
  • In a bowl beat eggs just enough to blend evenly.
  • Stir in sugar and salt.
  • Slowly, beating with a fork, add the scaleded milk and vanilla.
  • Stir in coconut.
  • Pour into buttered custard cups.
  • Set cups in a shallow baking pan; pour 1 inch of water into the baking pan.
  • Bake for 45 minutes or when a knife inserted in custard comes out clean.
  • Custard will be firm when it cools.
