Ingredients
- 3 eggs, lightly beaten
- 1/2 c. sugar
- 1/4 tsp. salt
- 3 c. milk, scalded
- 1 tsp. vanilla
- 1/2 c. flaked coconut
Method
- Preheat oven to 350°.
- In a bowl beat eggs just enough to blend evenly.
- Stir in sugar and salt.
- Slowly, beating with a fork, add the scaleded milk and vanilla.
- Stir in coconut.
- Pour into buttered custard cups.
- Set cups in a shallow baking pan; pour 1 inch of water into the baking pan.
- Bake for 45 minutes or when a knife inserted in custard comes out clean.
- Custard will be firm when it cools.
