Ingredients
- 1 jar Seneca sliced mushrooms
- 1 chopped onion
- 3/4 c. heavy cream
- 1/4 lb. grated Swiss cheese
- 1 pkg. frozen spinach
- 3 eggs
- 3/4 c. milk
- 2 Tbsp. butter
- 2 pie crusts (deep dish)
Method
- Precook pie crust at 400° for 2 to 3 minutes.
- In skillet, saute onions and mushrooms in butter.
- Cook and drain spinach and cut into small pieces.
- Add to skillet and mix.
- Allow to cool. Beat eggs, milk and cream.
- Add skillet mixture along with cheese and mix.
- Pour into pie crust and bake at 450° for 15 minutes. Reduce heat to 350° and continue cooking until golden brown, approximately 20 minutes.
