Ingredients

  • 1 jar Seneca sliced mushrooms
  • 1 chopped onion
  • 3/4 c. heavy cream
  • 1/4 lb. grated Swiss cheese
  • 1 pkg. frozen spinach
  • 3 eggs
  • 3/4 c. milk
  • 2 Tbsp. butter
  • 2 pie crusts (deep dish)

Method

  • Precook pie crust at 400° for 2 to 3 minutes.
  • In skillet, saute onions and mushrooms in butter.
  • Cook and drain spinach and cut into small pieces.
  • Add to skillet and mix.
  • Allow to cool. Beat eggs, milk and cream.
  • Add skillet mixture along with cheese and mix.
  • Pour into pie crust and bake at 450° for 15 minutes. Reduce heat to 350° and continue cooking until golden brown, approximately 20 minutes.
