Ingredients

  • 1 ( 15 oz can) black beans, mostly drained
  • 1 shallot, or 1/2 large onion
  • 2 cups shitake mushrooms, sliced
  • 1/2 cup raw cashews and raw walnuts, or other nut mix
  • 1 tablespoon balsamic vinegar
  • 1/8 teaspoon paprika
  • 1 cup cooked brown rice

Method

  • Blend everything except rice in a food processor or high powered blender. Transfer to a bowl, mix with rice, and form 6 patties. Heat a non-stick pan or a pan rubbed with a small amount of olive oil . Flatten patties and cook 8-10 minutes on each side. Serve with low sodium ketchup or
