Ingredients

  • 3 cups turkey stock
  • 2 chopped and seeded chiles
  • 4 slices turkey bacon
  • 1 lb. ground turkey
  • 1 onion
  • 5 cloves garlic
  • Red pepper flakes
  • Tomato paste
  • 2 cans black beans
  • 1 can crushed tomatoes
  • 1 cup coffee
  • Paprika
  • Coriander
  • Cocoa
  • Cinnamon
  • Grated cheddar

Method

  • Boil turkey stock with chiles. Simmer 10 mins.
  • Remove peppers and puree.
  • Chop turkey bacon and cook 3 minutes. Add turkey meat and cook 5 minutes.
  • Chop onion and garlic. Add to pan and cook 5 minutes.
  • Add pepper flakes and tomato paste. Cook 1 min.
  • Add broth, pureed peppers, beans, tomatoes, coffee, paprika, coriander, cocoa, and cinnamon.
  • Bring to a boil and simmer 15 mins.
  • Serve topped with cheese.
