Ingredients

  • 2 Tbsp. butter
  • 1/2 c. onion, chopped fine
  • 1 small clove garlic, crushed
  • 2 Tbsp. flour
  • 1 Tbsp. curry powder
  • 1 pt. half and half
  • 1 qt. chicken stock
  • 1 raw apple, peeled and chopped
  • 1 Tbsp. salt
  • dash of pepper, freshly ground

Method

  • Melt butter in the pot in which soup will be made.
  • Add onion and crushed garlic; cook over low heat until the onion is soft. Remove garlic; add flour and curry powder.
  • Cook 2 minutes.
  • Add milk and chicken stock which have been cooked over hot water until smooth.
  • Add apple, peeled and chopped, 10 minutes before serving. Season with salt and freshly ground pepper (just a dash).
  • Serves 6.
