Ingredients
- 2 Tbsp. butter
- 1/2 c. onion, chopped fine
- 1 small clove garlic, crushed
- 2 Tbsp. flour
- 1 Tbsp. curry powder
- 1 pt. half and half
- 1 qt. chicken stock
- 1 raw apple, peeled and chopped
- 1 Tbsp. salt
- dash of pepper, freshly ground
Method
- Melt butter in the pot in which soup will be made.
- Add onion and crushed garlic; cook over low heat until the onion is soft. Remove garlic; add flour and curry powder.
- Cook 2 minutes.
- Add milk and chicken stock which have been cooked over hot water until smooth.
- Add apple, peeled and chopped, 10 minutes before serving. Season with salt and freshly ground pepper (just a dash).
- Serves 6.
