Ingredients

  • 1 baked pie shell
  • 1 c. sugar
  • 1 lemon, juice and rind
  • 3 Large eggs
  • Healthy pinch of salt (about 1/4 tsp.)

Method

  • Beat egg yolks with 1/2 c. sugar and butter, size of walnuts.
  • Add in lemon juice and grated rind.
  • Cook over warm water till thick, about 10 min.
  • Set aside and beat the 3 egg whites.
  • Add in 1/2 c. sugar and beat.
  • Mix in lemon crust.
  • Don't BEAT IT IN!
  • Put in pie shell and bake 25 min at 275 to 300 degrees.
