Ingredients

  • 3/4 cup plain yogurt
  • 2 tbsp finely chopped red onion
  • 1 tbsp finely chopped fresh dill
  • 1 tbsp finely chopped fresh mint
  • 1 tbsp fresh lime juice
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp freshly ground black pepper
  • 1/4 tsp kosher salt
  • 1/2 tsp kosher salt
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cumin
  • 1/4 tsp turmeric
  • 1/4 tsp cinnamon
  • 1/4 tsp ground allspice
  • 1/4 tsp coarsely ground black pepper
  • 1/4 tsp ground cardamom
  • 1/8 tsp shredded saffron threads
  • 3 tbsp cold water
  • 1 1/4 lb lamd cut into strips 1x3 inches
  • 4 pita pockets
  • 1 cup torn lettuce
  • 1/2 cup diced fresh tomatoes vine ripped for best results
  • 1 enough olive oil to coat lamb

Method

  • mix the sauce ingredients together set aside
  • for seasoning mix heat over medium heat till you can smell the aroma of the mix add to cold water wisk well set aside
  • add seasoning mix to lamb before grilling
  • grill lamb to your desired doneness
  • assemble the lamb lettuce tomatoes into pita add Moroccan sauce enjoy.
  • note you can substitute the lamb with ground lamb patties
