Ingredients
- 2 c. flour
- 2 tsp. baking soda
- 1/2 tsp. salt
- 2 tsp. cinnamon
- 1 1/4 c. sugar
- 2 c. grated carrots
- 1/2 c. raisins
- 1/2 c. chopped nuts
- 1 apple, peeled, cored and grated
- 1/2 c. coconut
- 3 eggs
- 1 c. salad oil or canola oil
- 2 tsp. vanilla
Method
- In a large bowl, mix dry ingredients.
- In a separate bowl, beat oil, eggs and vanilla. Add all others. Bake at 350° for 20 minutes.
- Makes 18 to 24 muffins.
