Ingredients
- 1 egg white
- 1 unbaked pastry shell
- 6 large fresh peaches, peeled and sliced
- 3/4 c. all-purpose flour
- 1/2 c. packed brown sugar
- 1/3 c. sugar
- 1/4 c. chilled butter, cut into 6 pieces
Method
- Beat egg white until foamy; brush over bottom and side of pastry.
- In small bowl, combine flour and sugars; cut butter into mixture until it resembles fine crumbs.
- Sprinkle 2/3 of mixture in bottom of crust; top with peaches.
- Sprinkle with remaining crumb mixture.
- Bake at 375° for 40 to 45 minutes or until filling is bubbly and peaches are tender.
- Yields 6 to 8 servings.
