Ingredients

  • 1 egg white
  • 1 unbaked pastry shell
  • 6 large fresh peaches, peeled and sliced
  • 3/4 c. all-purpose flour
  • 1/2 c. packed brown sugar
  • 1/3 c. sugar
  • 1/4 c. chilled butter, cut into 6 pieces

Method

  • Beat egg white until foamy; brush over bottom and side of pastry.
  • In small bowl, combine flour and sugars; cut butter into mixture until it resembles fine crumbs.
  • Sprinkle 2/3 of mixture in bottom of crust; top with peaches.
  • Sprinkle with remaining crumb mixture.
  • Bake at 375° for 40 to 45 minutes or until filling is bubbly and peaches are tender.
  • Yields 6 to 8 servings.
