- 6 boneless pork chops, partially frozen
- 12 cup bottled teriyaki marinade
- 12 cup peanut butter
- 14 cup brown sugar
- 14 cup water
- 2 tablespoons rice wine vinegar
- 2 tablespoons soy sauce
- 14 teaspoon garlic powder
- 14 teaspoon powdered ginger
- 18 teaspoon cayenne pepper
- 1 12 cups cucumbers, thinly sliced
- 1 green onion, thinly sliced
- 2 tablespoons rice wine vinegar
- 1 tablespoon sugar
- 14 teaspoon salt
- 18 wooden skewers (6 inches each, soaked in water for 1 hour)
Method
- Thinly slice pork chops.
- Thread onto skewers accordion style.
- Place in shallow baking dish; pour marinade over meat.
- Refrigerate covered 2 hours or overnight; turning occasionally.
- Grill over medium coals 10 minutes or until cooked through, turning every 3-4 minutes.
- For dipping sauce, combine ingredients in bowl; mix with wire wisk until blended.
- Makes approximately 1 cup.
- For salad, toss cucumbers with remaining ingredients.
- Makes 1-1/2 cups.
- Serve with Peanut Dipping Sauce and Cucumber Salad.
