Ingredients

  • 6 boneless pork chops, partially frozen
  • 12 cup bottled teriyaki marinade
  • 12 cup peanut butter
  • 14 cup brown sugar
  • 14 cup water
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons soy sauce
  • 14 teaspoon garlic powder
  • 14 teaspoon powdered ginger
  • 18 teaspoon cayenne pepper
  • 1 12 cups cucumbers, thinly sliced
  • 1 green onion, thinly sliced
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon sugar
  • 14 teaspoon salt
  • 18 wooden skewers (6 inches each, soaked in water for 1 hour)

Method

  • Thinly slice pork chops.
  • Thread onto skewers accordion style.
  • Place in shallow baking dish; pour marinade over meat.
  • Refrigerate covered 2 hours or overnight; turning occasionally.
  • Grill over medium coals 10 minutes or until cooked through, turning every 3-4 minutes.
  • For dipping sauce, combine ingredients in bowl; mix with wire wisk until blended.
  • Makes approximately 1 cup.
  • For salad, toss cucumbers with remaining ingredients.
  • Makes 1-1/2 cups.
  • Serve with Peanut Dipping Sauce and Cucumber Salad.
