Ingredients
- 1 or 2 carrots, sliced
- 2 or 3 celery stalks, sliced
- 1/2 brown or white onion, chopped
- 1 (4 oz.) can sliced mushrooms (optional)
- 1/2 to 1 c. vegetables, cut in bite-sized pieces*
- 1/2 c. additional vegetable**
- 2 more cups water
- 1 pkg. dry onion soup mix or 1 Tbsp. dry beef or chicken bouillon or 1 can beef or chicken stock or bouillon *** or 1 (3 oz.) can plain tomato juice

- *You may use all or just your favorites (broccoli, tomatoes, cauliflower, zucchini squash, green or red cabbage, green beans or beets).
