Ingredients
- 1 very large and 1 small can sweet potatoes
- 1 egg, beaten
- 1 Tbsp. brown sugar
- 1 tsp. flour
- 1 small can crushed pineapple
- 1 Tbsp. shortening or oil
- crushed corn flakes
Method
- Thoroughly mash potatoes.
- Add all ingredients, except shortening or oil and corn flakes.
- Take serving spoon of mixture and shape into potato shape.
- Roll in crushed corn flakes.
- Place in baking pan with oil.
- Bake at 350° for 3/4 hour.
