Ingredients

  • 7 tbsp butter, melted
  • 3/4 cup self-rising flour
  • 1/2 tsp baking powder
  • 2 None eggs
  • 1/3 cup sugar, plus additional for sprinkling
  • 1 lb strawberries

Method

  • Preheat the oven to 350°F. Lightly grease eight 2/3-cup ramekins. Place on a baking sheet.
  • Beat melted butter, flour, baking powder, eggs and sugar in a large bowl with an electric mixer on medium speed until smooth and creamy.
  • Reserve 4 strawberries for garnish. Hull and quarter the remaining strawberries. Divide among the prepared dishes. Top with batter and sprinkle with additional sugar.
  • Bake for 15-20 minutes until risen and golden. Halve the reserved strawberries and use to garnish each cake. Serve warm or cold.
